Uncle Phil's Swedish Pancakes

This is my Uncle Phil's recipe. These are basically the same as crepes, as far as I understand them. (I'm sure French crepe recipes are more nuanced than I understand though.) We have also been known to call these "Rollie-Pollies". These are a favorite to eat, but not my favorite to make. (Because they take time and care to cook.)

Ingredients
  • 3 eggs
  • 1 tablespoon sugar
  • ½ teaspoon salt
  • ¾ cup flour
  • 1¼ cup milk
  • ¼ cup oil or melted butter
Directions
  1. Preheat a round pan (or crepe pan).
  2. Mix ingredients in a blender.
  3. Spray pan with cooking spray (or use butter).
  4. Pour a small amount of batter in the center of the pan and swirl it around to cover the pan in a thin amount of batter.
  5. When the edges start to brown, carefully flip the pancake over and cook on the other side for 15-20 seconds.
  6. Put toppings (such as fruit, jam, lemon juice, whipped cream, etc...) on the pancake, roll, and eat.
